Merry Christmas 2008 Wish List

sparrow_sam introduced me and it sounds like a load of fun! :) So allow me to introduce myself...I'm Emily, almost 19 years old, and a broke college freshman at Stephen F. Austin State University in Nacogdoches, Texas. Christmas is easily my favorite time of year. I love the tradition of things. I have always loved going to my mom's house during the holidays because she is very traditional about everything and it just makes me feel all warm and cozy. :) So on to my list. <3
1) Photoshop CS2 or higher. I'd be eternally thankful for a hard copy, even if it was just a copy of yours or used. I am suffering with just Photoshop 6.
2) A Macbook. Because, seriously, the laptop I have now sucks. A lot. I really dislike Vista right now. I just think life would be easier on an Apple.
3) A paid account +userpics. I can hardly bear to delete my icons to make room for more. I just got hooked on Doctor Who and so I had to make room for new amazing icons but that meant deleting all my others. :( It continually makes me sad.
4) CD's with your favorite songs. I really like mixes (fanmix or regular i dont care). I prefer them to complete albums just because it's a compilation of a bunch of good songs rather than a few good songs and a bunch of mediocre songs. So send me your faves!
5) Here is my amazon wishlist. HERE If you are unable to buy something new, used is just as great. Or if you have something from there laying around the house I will gladly take anything that's been used. :) <3
6) My sister is a new wife and mother. She is getting all excited about cooking for her family once they get into their own house. So I am getting her a recipe box (this one as a matter of fact) and I'd like to put some recipes in there for her. So give me your best! <3
7) My Grandmother isn't very organized in her recipes so a nice recipe book would be amazing. One that I can paste cutouts from magazines and also some of the original paper that her mother wrote on. That'd be awesome. :)
8) Any books you have laying around the house that you don't want anymore would be cool. Especially vintage children's literature or just regular children's literature. :) Fairytales/Legends/Mythology stuff like that would be cool too. :D

18 oz. peanut butter
6 tbsps. honey
Non-fat dry milk
Cocoa for flavor (optional)
Mix all ingredients, adding enough dry milk to give make dough pliable. Shape, and eat!
Cajun Crab Cakes
Ingredients:
2 serving olive oil cooking spray (5 one-second sprays per serving)
1 pound lump crabmeat, fresh, jumbo
2 Tbsp uncooked quick oats
1/4 cup roasted red peppers, diced (from a water-packed jar)
2 Tbsp fat-free mayonnaise
2 tsp Creole seasoning, or Cajun seasoning, divided
1 tsp Dijon mustard
3/4 cup uncooked quick oats
Instructions:
Preheat oven to 400ºF. Coat a large baking sheet with cooking spray.
In a large bowl, combine crabmeat, 2 tablespoons of oats, peppers, mayonnaise, 1 teaspoon of seasoning and mustard; mix gently to combine, being careful not to break up crabmeat lumps.
In a shallow dish, combine remaining 3/4 cup of oats and remaining teaspoon of seasoning.
Shape crab mixture into 4 equal patties, about 1-inch thick each. Transfer crab cakes to oat mixture and turn to coat both sides. Transfer crab cakes to prepared baking sheet and coat surfaces with cooking spray.
Bake until crab cakes are firm to the touch and golden brown, about 15 minutes. Yields 1 cake per serving. (Note: These are tasty plain but you can jazz them up with a sauce made from fat-free mayonnaise spiked with horseradish.)
Meatloaf
Ingredients
* 6 ounces garlic-flavored croutons
* 1/2 teaspoon ground black pepper
* 1/2 teaspoon cayenne pepper
* 1 teaspoon chili powder
* 1 teaspoon dried thyme
* 1/2 onion, roughly chopped
* 1 carrot, peeled and broken
* 3 whole cloves garlic
* 1/2 red bell pepper
* 18 ounces ground chuck
* 18 ounces ground sirloin
* 1 1/2 teaspoon kosher salt
* 1 egg
For the glaze:
* 1/2 cup catsup
* 1 teaspoon ground cumin
* Dash Worcestershire sauce
* Dash hot pepper sauce
* 1 tablespoon honey
Directions
Heat oven to 325 degrees F.
In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.
Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.
Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.

Date: 2008-12-06 05:55 am (UTC)Get 9x9 baking pan (or 8x8 or I've used 9x12 - doesn't matter that much)and line it with wax paper (so the fudge won't stick)
Melt:
1 12ox bag semi-sweet chocolate chips
1 14oz can sweetened condensed milk (NOT evaporated milk)
together in saucepan over low heat until the chips are completely melted. Keep stirring so it doesn't burn on the bottom!
Remove from heat and stir in about 1 tsp vanilla. You can also stir in other things at this point - nuts, mini marshmallows, marshmallow cream, whatever you fancy.
Pour into the wax-paper lined pan and chill in the fridge until it firms up. Then take it out of the pan, peel off the wax paper, and cut into squares (small ones - it's pretty rich).
You can do this with white chocolate chips but the fudge won't harden properly - it'll be kind of soft. Still really good, though.

Basically, you post books you have and don't want on the site. If someone wants a book you send it to them. You earn points for sending out books and you use those points to request books from other site members. I've gotten lots of books that I couldn't find anywhere else.
